It's been ages since I've posted, but I figured I'd post a recipe that turned out well.
The past few years I've been making home sauerkraut, mostly to turn into Jota (Istrian hot pot), but it works pretty well to season a stir fry or have alongside ravs. 25 g salt / kg cabbage.
Today I decided to finish off last summer's and make a kind of pasta salad with soba noodles. I do not recommend doing this with store-bought sauerkraut, it'll taste all wrong.
1/3 a head of cabbage of homemade sauerkraut. I put black pepper and bay leaves in.
1 pkg of boneless skinless chicken thighs, marinated in soy sauce, sesame oil, cooking sake, ginger, and kalonji (black sesame)
1 bunch chopped scallions
1 large sliced carrot
1 long english cucumber, sliced
1 pkg mung bean sprouts
4 bundles of soba
spoonful of sugar
Rinse the sauerkraut and leave it to drain (or it'll be too salty).
Now that we have an induction stove with a "watch out" setting, I used that to sear the chicken on both sides and then threw in the whites of the scallions and the carrot, tossed in the marinade, and turned it down. Had to toss in a bit of water too. Pulled out the chicken when it was as close to barely done as I could manage (not all the pieces finished at the same time). Sliced it up and added it to the kraut. Tossed in the sauce and veg after a quick toss round the pan, then added a spoonful of sugar and did a quick de-glaze with water. Finally, filled the pan 1/3 with water and boiled it to cook the soba. Meanwhile added the scallion greens, cucumber, and rinsed sprouts to the bowl and tossed. Threw in a teensy bit of black vinegar and a touch more soy sauce to adjust the seasoning. Boiled the soba for 2.5min (no more, sayeth the web, and they were about right), stirring – "watch out" mode is great for bringing pasta back to a boil fast. Drained, rinsed quickly with cold water, and stirred into the salad.
Yum! I loved being able to do the pasta in the same pot as a kind of chaser while I finished off salad prep.
I might throw the kalonji in at the end next time 'round.
